Showstopping Pasta

INGREDIENTS:
- 10-12 of your favorite mushrooms (I used baby Bella and shiitake)
- 2 tbsp of plant-based butter (I like @miyokoscreamery)
- 1 tbsp fresh minced garlic
- 1 tbsp olive oil
- 1 package of your favorite pasta
- 1/2 juice from a fresh lemon
- 1 C of vegetable stock
- 1 C of plant-based creamer (I use @ripplefoods)
- 1 tbsp of thinly chopped chives
INSTRUCTIONS:
1. Prepare your pasta (save 1/2 cup of the salted pasta cooking water)
2. Add olive oil to a hot pan
3. Toss in your thinly sliced mushrooms
4. Add olive oil if necessary (mushrooms can suck it up pretty quickly)
5. Cook down about 10 minutes
6. Add your butter and garlic to the pan
7. Cook down, about five minutes
8. Add your plant-based creamer and cook down for a few minutes
9. Add vegetable stock to thin out sauce, cook for about 5 minutes and add your fresh lemon juice
10. Add a little of your pasta water to help the sauce adhere to the actual pasta
11. Add your cooked pasta and toss
12. Add your salt and pepper to taste
12. Garnish with chives just before serving
Enjoy. This is a great dish for leftovers, to reheat, add a little water to the dish before heating to loosen the sauce.
