Great Northern Bean Soup

Prep time: 1 hour. Servings: 8
Ingredients:
- 2 C of great northern beans
- medium onion, diced
- 3 garlic cloves, minced
- 3 celery stalks, chopped
- 3 carrots, peeled and chopped
- 2 C of fresh grape or cherry tomatoes
- 2 C of tomato sauce puree
- 2 C of veggie stock
- 1 C of precooked rice
- 3 twigs of fresh or dried thyme
- 2 C of thinly sliced kale
- avocado for garnish (optional)
Directions:
- Add a tbsp of olive oil to a hot pan and toss in your onion, garlic, celery and carrots, cook until fragrant, about 5 mins.
- Add your beans and stir for about 5 mins.
- Add in all other ingredients except your kale and rice if it’s precooked. If your rice is not cooked, add it now.
- Bring to a boil and then simmer on low for at least an hour. The longer the better. Add an additional cup of veggie stock for every hour you let it simmer.
- When it’s just about done, add your kale and precooked rice and salt and pepper to taste.
